Finally able to breathe

Studying for boards. Check.

Studying some more. Check.

Boards actually completed. Check.

Ben's 3rd birthday. Check.

I feel like I can finally breathe. Last night was the first night I didn't have anything I had to get done. Could I have cleaned the house and got caught up on laundry, sure. Did I have to do it, no. And that is great feeling. I'm pretty sure I was asleep by 8:45.

Now that everything else is done, it's full steam ahead on wedding planning. Actually with just 3 months to go, it's more like tying up the loose ends and making sure every detail is finalized.

I will do an official post about Ben's bday party tomorrow, but yesterday was his little party at school. He and his friends ate cupcakes, fruit snacks, and Ben beamed from ear to ear as everyone sang Happy Birthday to him.
The rest of the afternoon was spent hanging out just the two of us. We rode the train at the mall,

And then enjoyed the 65 degree weather at the park.

And since it was dark by the time we got home from the park, dinner consisted of a picnic on the floor.

Tonight we are headed to see Sesame Street Live as part of Ben's birthday present from my parents. Be jealous.

Happy 3rd Birthday, Ben!

Today my baby is 3. I am tearing up just writing that.

Time goes by so so fast. It's not just something everybody says. It's true.

Each year that passes my baby is able to do more and more. He is becoming fiercely independent. He says mom and dad instead of mommy and daddy.

I'm happy and sad all at the same time. Sad that my baby is growing up. Happy at the boy he is becoming. He has such a wild spirit, but also a kind heart.

I am afraid I wouldn't love another baby as much as I love him.

He has forever changed my life and I can't really remember the meaning in my life before I had him.

There is no love like the love between a mother and her son.

I love him. Then, now, and always.

Catch Up

Remember how last week  I was sick on the one day it just happened to be 70 degrees outside? Well I'm still not over that shiz.

Although the body aches did stop, the coughing and constant nose blowing continues along with my loss of smell and taste. I'm starting to get worried it's not coming back. Has anyone ever heard of this? I'm afraid to Google it.

This week is out of control busy.

I have my boards on Friday (fingers crossed) which I need to study for all this week but on top of that I'm also preparing for little big man's 3rd birthday on Sunday, not to mention I still haven't ordered the cake, decided what I'm baking for his classroom party at school or finished the decorations for his party.
This little face makes it all worth it.

Oh yeah, and continuing to check things off for the wedding.

A little stress never hurt anyone right?




And because I couldn't tell you the last time I made a real home cooked meal besides tacos, I'm making this baby tonight



Here's to hopping the Cheesy Chicken Ranch Lasagna is good and the studying goes even better!

Lilly

I'm about to say write something that just might get me beat up in the blog world....................

I'm not a huge fan of Lilly Pulitzer. And by not a huge fan I mean I almost hate all her stuff.

There I said it. And I feel much better.

I know a lot of blogs gush over the fabulousness that is Lilly, but to me some of her stuff is just dang ugly. If you happen to love it then go for it. I'm sure half the crap I wear people think is ugly, so whatev.

So imagine my surprise when I saw these outfits by none other than LP.

Why?

Does it have to be almost 70 degrees outside today and I am sick. Boo. Hiss.

I had grand plans of going to the gym and trying out some delicious new recipes on this MLK Jr. day but I woke up with a cough, runny, nose, and that overall feeling of blah.

I've been resting all day and sleeping on and off so hopefully in a few hours I'll feel well enough to take Ben on a nice long walk around the block. To help me feel better he piled all of his trains on top of me on the couch. Ya know just what you need when you're sick-soup, lots of water, and trains.

Hopefully you all are enjoying the weather more than me because tomorrow it's supposed to be 30 again with sleet.

Homemade Doughnuts, Sorta

Every Saturday is doughnut day in our house. I'm not too fond of the round little things but J and Ben love them .

Usually we pick up our favorites from Casey's, but a few weekends ago I decided to make my own.

Although I've found lots of great recipes for homemade doughnut dough, I didn't want to go that far into homemade land. Let's face it, yeast scares me.

Instead I turned to the next best thing. A semi homemade recipe that resulted in beautifully shaped doughnuts that didn't quite taste like the traditional doughnut but were still enjoyable enough that J scarfed down 2.

To make these,

You'll need:
- 1 can Grands Pillsbury biscuits (do not get the flaky ones, please:))
-Vegetable Oil
-Cinnamon
-Sugar

Start by separating each biscuit and cut a small whole in the middle of each one. I just used a pairing knife.

Once oil is heated, place doughnuts in the oil.

Cook for approximately 2 minutes or until golden brown and then flip, cooking the other side.

Once doughnuts are golden brown, place on a paper towel to drain excess oil, then coat with cinnamon and sugar mixture. (I just mixed equal parts cinnamon and sugar)

Serve to two hungry boys or anyone else who happens to be hanging around.

Wedding Wednesday!

Wedding countdown: 115 days. 115 days people!

I know it's getting close because the wedding dreams have started.

I get married in jeans.


I get my cake from the local grocery store. Last minute. And it only feeds 8 people.


I cancel the wedding because the limo doesn't show up.

Let's hope all of these things stay in my dreams.

Things are progressing right along and as soon as our Save the Dates arrive they will be off in the mail. I realize it's getting almost to the point of too late to send them out but I don't care. It's my wedding and I'll do what I want:)

And as if blogs aren't self absorbent enough, our engagement pics arrived and I'm forcing you all to look at some of our favorite pictures of me...and J.

Pinterest Project {Red Velvet Cheesecake Brownies}

I found these yummies on Pinterest.



The red and white seemed perfect for the holidays so I whipped up a batch to take to my in-laws on Christmas Eve.



Ingredients:
  • 1/2 cup butter
  • 2-oz dark chocolate, coarsely chopped
  • 1 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 tsp red food coloring
  • 2/3 cup all purpose flour
  • 1/4 tsp salt
  • 8-oz cream cheese, room temperature
  • 1/3 cup sugar
  • 1 large egg
  • 1/2 tsp vanilla extract

Directions:
  1. Preheat oven to 350F. Butter the bottom and sides of a 8 inch metal baking pan. Put a long piece of parchment paper in the bottom of the pan, letting the parchment extend up two sides of the pan and overhang slightly on both ends. (This will make it easy to remove the bars from the pan after they have baked.) Butter the parchment.
  2. In a small, heatproof bowl, melt butter and chocolate together. Stir until combined and very smooth. Set aside to cool for a few minutes.
  3. In a large bowl, whisk together sugar, eggs, vanilla extract and red food coloring. Add chocolate mixture and stir until smooth. Add flour and salt and stir until just combined and no streaks of dry ingredients remain.
  4. Pour into prepared pan and spread into an even layer.
  5. To prepare cheesecake mixture, beat cream cheese, sugar, egg and vanilla extract in a medium bowl until smooth. Distribute the cheesecake mixture in 8 dollops over batter in the pan. Swirl in with a knife or spatula.
  6. Bake for 35-40 minutes, until brownies and cheesecake are set. A knife inserted into the cheesecake mixture should come out clean and the edges will be lightly browned.
  7. Let cool completely in pan on a cooling rack before lifting out the parchment paper to remove the brownies.
Overall, I would give them a B, B-. The red velvet brownie part? A. The cheesecake mixture, eh just ok. And these are definitely better warm.

Weekend Recap

Yet another weekend has passed.

This weekend was the perfect mix of laziness and productivity.

Friday night J had a work meeting that went late aka his client took him out for drinks to celebrate the awesome work that he did for them. Poor baby.

So what's Ben and I to do? I took Ben for a little ice cream date to our favorite fro-yo place. We're soaking up the 50 degree weather while we can.

Saturday I went to a spinning class at the gym and then Ben and I met up with Mrs. Bojangles for lunch. I forgot to snap a pic as I was trying to wrangle a tired, queso chugging monster.

Saturday afternoon J's mom picked up Ben for some quality bonding time and while J worked, I went to a delicious sushi dinner with this little lady and our other friend Laura.

After dinner J so lovingly agreed to see this movie with me.
It was a solid C.

Sunday was spent lounging around until we finally decided to get off our butts and clean the house. Every time we clean the house J proudly proclaims at least 5 times, "I love a clean house." I proclaim, "We'll help me keep it that way." with a smile of course.

Tonight I'm going to make my first pie. Ever.
Iowa Girl Eats Peanut Butter Pie to be exact. Wish me luck.

Harlem Globetrotters

Last night, thanks to a Groupon deal I scored a few weeks ago, we attended a Harlem Globetrotters game.

What can I say about the Globetrotters? The only funny part was their mascot during a break. And the dance music they played.

But to an almost 3 year old, it was a fun time.

Until half time which didn't begin until 8:30pm and then the meltdown started which meant it was time to leave.

Even though the adults thought it was really lame, this little face made it all worth it:)

Notice the empty seats? Yeah. Not a good sign.

Pinterest Challenge #3 {DIY Coasters}

Although the Stop Pinning and Start Doing Challenge is officially over, I wanted to post my final Pinterest Challenge. It was completed before the challenge deadline was up, but I couldn't post about it until after Christmas as I was giving what I made as gifts.

For my 3rd project I decided to make DIY coasters that have been all over Pinterest.

To make these coasters first you'll need to:

1. Gather your materials.
-tile coasters (I got mine at Lowe's for .18 cents)
-scrapbook paper
-hot glue gun
-felt
-clear acrylic glaze (I got mine from Walmart -Krylon brand)

2. Next cut your scrapbook paper to fit the size of your coaster. I just traced the tile on the paper and cut inside the line so that the paper would be a little smaller than the tile. I didn't want any paper hanging over the side.

3. Get yourself a large bottle of this. If you like crafting I guarantee you will use it again and again. And it will last forever.

4. Apply a coat of Mod Podge directly to the tile. Place scrapbook paper on tile (you only have a few seconds to move the paper once it comes into contact with the Mod Podge).

5. Apply another generous coat of Mod Podge over the top of the paper. Make sure to spread it evenly to avoid streaks when it dries.

5. I repeated the above steps with 3 different patterns of paper. When Mod Podge is dry, spray with clear coat spray. I put the tiles on store bags to make it easier to move them outside to spray.

6. Cut felt squares and hot glue to the corner of the tiles. You can also buy pre-cut felt circles but I couldn't find any at my store.

7. Put in a cute box and ta-daaa!
