30 Day Challenge

Crazy, maybe. Or maybe something really awesome will happen in these next 30 days. In approximately one month I'll be turning another year older and I want to make this last month of my 30th year the best one yet and to prove to myself, I got this. So what's this challenge entail? Glad you asked.

Workout 20 of the 30 days
No soda
Finish 3 house projects
Heavy focus on positive parenting
Prepare at night for the day ahead
No repeat outfits for 30 days-shop my own closet
3 Random Acts of Kindness for Strangers
Blog 4 days a week

Some of these will certainly be easier than others, but I can do anything for 30 days right? Anybody else done a challenge like this?

{Kid Friendly} Chicken Pad Thai


 Not only is this a dish that your kids will actually eat, but I made it on a weeknight. A weeknight! After working a full 8 hour day. And honestly, it didn't require any more effort than our usual Taco Tuesday nights. 

This recipe is loosely adapted from here, but the great thing about this dish is that you can add whatever veggies you'd like. If you're a vegetarian you could even sub out the chicken for tofu.

What You'll Need:
4 ounces cooked fettuccini noodles
2 chicken breasts cut into cubes
Peanut Oil (can sub olive oil if needed)
Snow Peas (can also use edamame, asparagus, sugar snap peas)
1/4 cup rice vinegar
1/4 cup soy sauce
4 teaspoons sugar
4 teaspoons peanut butter
2 tablespoons water
chopped peanuts (optional)

What to Do:
In large skillet, place 1 teaspoon oil and heat on medium. Add chicken and cook through until no longer pink. 
While chicken is cooking, boil noodles, drain, and set aside.
Remove chicken and add another teaspoon of oil to the skillet. Add in snow peas (or other veggies) and cook until slightly tender. Do not overcook. 
While veggies are cooking, place the vinegar, soy sauce, sugar, water, and peanut butter in a microwave safe bowl and microwave for 30 seconds then stir until combined.
Add chicken, sauce, and noodles to the skillet and turn the heat to medium-high for 3-4 minutes. Once the sauce has thickened a bit, remove from heat and serve.
Garnish with crushed peanuts if desired.

1st day of 2nd Grade

Yesterday marked the first day back to school. While both Ben and I are excited for 2nd grade my heart also aches just a little at how fast he is growing up. 2nd grade was my favorite and I just loved my teacher so I'm hoping the same is true for Ben. We've talked a lot lately about being a leader and that is my hope for him this upcoming year. To use his humor, heart, and smarts to be an example to those around him and to encourage everyone he meets. Here's to a great year!

Friday, Friday

The only thing standing between me and the glorious weekend is a day long training I'm giving to a bunch of teachers who I'm sure would rather still be on summer break. So should be fun. Let's hope the day flies as we've got an exciting weekend planned.

While taking a glance at our Summer Bucket List, I realized I am way behind on trying out some new  easy Summer cocktails. With only 3 ingredients, these are not only easy, but all of them look delicious.

I hit up one of my favorite consignment sales and got some great things for the boys. I got all of this for $23 including 3 Nike shirts and a pair of converse as well as a toy (not pictured) that Jack just couldn't part with.

One of my oldest and bestest friends came into town and we got to meet sweet baby Callen for the first time. As much as I loved getting to hold him just look at the pure joy on Ben's face. Melt my heart.

//four//
Chicken Pad Thai. From scratch. On a weeknight. And the kids ate it. Recipe coming to the blog soon.

//five//
One of my favorite nighttime Summer outfits that ensures I don't sweat while going from house to the car. T-shirt dress, necklace, wedges, and a colorful clutch.

Weekend Recap


Anyone else asking themselves this same question? I know time always seems to fly but man, this Summer went by in the blink of an eye. Ben starts 2nd grade a week from tomorrow so we are making the most of what's left of August and trying to get back into somewhat of a routine.

The weekend started with Friday night happy hour with coworkers and me fast asleep by 9:30pm.
I continued my obsession with Starbuck's Strawberry Acai Refresher Saturday morning before hitting up my first estate sale. Has anyone else been to one of these? You basically walk through someone's home and everything is for sale. Everything. The house itself was for sale for almost $500,000 yet people were buying .50 cent half used bottles of household cleaners and open spices which was a little odd but to each their own!

The weather this weekend was gorgeous and in the low 80's. After being on the hunt for the perfect t-shirt for what seems like forever, I finally find these v-neck ones at Target. So soft and the perfect length.

Saturday lunch where I managed to snag this picture with Ben and Jack managed to take 153 pictures of body parts and our table.

We braved the mall to do some back to school shopping and despite it being tax free weekend, the lines weren't that bad. 

I posted this picture on my Instagram but I had literally just sat down to enjoy this when the kids came running down the hallway. How do they know? In all honesty, despite looking delicious, it actually tasted horrible. 

The kids slept in until 8:30 Sunday morning which meant momma got to sleep in too! But the quiet didn't last long.

That afternoon the kids and I headed to The Big Tree, which is the largest Bur Oak tree in the United States as well as the largest tree in MO. The boys didn't share my enthusiasm about how cool it was.


Lunch was followed by the library where we got to pick out some free books for completing the Summer Reading Program. Anyone else's kids want to play on the computer and with the pretend kitchen instead of actually reading?
